Olive variety influences phenolic composition, but it does not determine a fixed polyphenol number. The finished oil reflects the interaction between the cultivar, growing conditions, maturity, processing and storage.
What cultivar contributes
A cultivar is a cultivated variety with particular inherited characteristics. Those characteristics help shape oil composition and sensory style. The review by Jimenez-Lopez and colleagues identifies genotype alongside agricultural and technological factors as an influence on EVOO composition.
This is why variety names are useful information. They help explain what a producer has chosen to work with. They are not a substitute for analysis of the resulting oil.
Why variety league tables mislead
A study examining cultivars across locations and crop years found significant effects of cultivar, maturity and environmental conditions on phenolic content. The same variety did not produce an invariant result across years and sites.
A statement that one cultivar produced more phenolics than another under a particular experiment is narrower than saying it always produces the highest-polyphenol oil. Differences in sampling and methods can further complicate comparisons between studies.
Storage adds another layer
In a study of eight Italian cultivars, phenolic profiles and chemical quality changed differently after seven months of storage. Varietal differences therefore matter not only at production, but also in how oils respond over time.
How to compare varieties usefully
- Compare current oils with identified harvests and batches.
- Check whether the same analytical method was used.
- Look at individual profiles where available, not totals alone.
- Taste the oils alongside their production information.
For GRO's single-variety releases, the cultivar is part of the provenance story. Avoid assigning a universal phenolic range or fixed tasting note to every Frantoio or Corregiola oil. Use the actual release's verified information.
