Why place changes flavour
What the research saysVariety sets the baseline
In a three-year study of two olive varieties grown at two sites, the oils were told apart first by variety, then by where they were grown.
Cooler sites, more intensity
In the same study, the colder, higher site gave oils more phenolic compounds, while the warmer, lower site gave less fruitiness, bitterness and pungency.
Harvest timing
Polyphenols, bitterness and pungency fall as olives ripen. Greener fruit gives a more intense, grassy, peppery oil.
Rain, not irrigation
Studies find oils from water-limited trees tend to carry more polyphenols, and irrigation tends to lower them. FORTE 559's grove is dryland, relying entirely on rainfall.
