The land

FORTE 507 comes from Bambra, in the foothills of the Otway Ranges. The grove sits on a steep, north-facing hillside that catches sun all day, while dense Otway forest shelters it from the south and east. It's higher, cooler and wetter than the coast.

Picked for balance

The Frantoio fruit for FORTE 507 was picked a little greener than the Corregiola in FORTE 559, but not at the very early stage often linked with high-polyphenol oils. The idea was to show that variety, site and timing can deliver high polyphenols and great flavour together, rather than simply harvesting as early as possible. The 2026 fruit came in on 14 June.

What it does to the oil

Otways oils are the most assertive GRO presses, with pungency that builds slowly rather than hitting straight away. FORTE 507 is rich and composed, with a peppery finish that stays with you.
